    Protected means fireproofed. Could be sprayed, concrete encapsulation, gypsum, and so on. Building codes illustrated has good info on this. Certain building elements such as lateral bracing doesnt need a fire rating.

    Yes, "unprotected" means that there is no fire rated assembly that provides any rating to that structural element.  You look around a IIB building, you see fully exposed steel columns and floor structure above - no fireproof spray, no fire-rated gypsum board assemblies wrapping the columns.  In the event of a fire, that structure is "unprotected." 

    When you said "projection method" did you mean to say "protection method?"  If so, protection would be achieved by either fireproof spray or like I mention above, encapsulating the structure in some fire-rated, UL-tested wall assembly.
