120/208-V, Single-Phase, 3-wire Electrical Service

Can anyone elaborate on when an 120/208-V, Single-Phase, 3-wire electrical service would be used? Or for what building typology? The explanation in MEEB is vague, stating “It is most often found within a building that takes 3-phase service rather than constituting a service voltage arrangement.” But I would like to understand what that means and where you might find it in a real world setting. Thanks for the help!
