Good question, I think we have to view the "roof assembly" as a system, and per B101-2017 Article 3.2.5 (basic services, schematic design phase) is when the Architect should provide documents depicting preliminary systems.

So should you note/describe the Roof assembly in the SD drawings and then during DD and CD start to detail it out? SD would you for example state: roofing membrane over protection board over plywood over roof truss over finish ceiling and then during CD start to detail that out and get more specific; TPO over 1/2" protection board over 3/4" roof sheathing over 24" roof truss over Stripping over 5/8" type 'C' GWB.

Exactly, the roof system (at SD) is fairly generic and then it progresses into a more detailed system (assembly) in DD and CD. At SD it's more about the Owner buying off on your building systems and cost estimate based on those systems. Once they approve that phase, off we go into writing specs and detailing the systems in DD and CD for the building construction permit.
